Easy Burritos

1 lg. onion, sliced into rings
1 (3 to 4) sirloin beef roast, cut in half
1/2 cup water
2 (1.25 oz) pkgs taco seasoning mix, divided
flour tortillas
4 cups shredded cheddar

Pico de Gallo

3 cups diced plum tomatoes
1/2 cup diced red onion
1/3 cup chopped cilantro
1/4 to 1/3 cup diced jalapeno peppers
1/3 cup fresh lime juice
1/2 tsp olive oil
1/4 tsp salt
1/4 tsp black pepper
stir, cover and chill

Cook roast at 350 in oven until done or all day in crock pot on low. Shred with fork and serve in tortillas with Pico de Gallo on top.
